The wine is loaded with aromas of fresh tropical fruit that intermixes with peppers and lemongrass. The taste sensation is fresh and crisp on the palette that leads to an extended finish.

This is the first block on vines that you look over when you sit on the cellar veranda looking over the wildlife section.  It  a green-skinned grape variety that originates from the Bordeaux region of France. The grape most likely gets its name from the French words sauvage (“wild”) and blanc (“white”) due to its early origins as an indigenous grape in South West France. In our cooler climate the grape has a tendency to produce wines with noticeable acidity and “green flavours” of grass, green bell peppers, and nettles with some tropical fruit.

Vinification
This wine is from the first plantings of Sauvignon Blanc in the Central Drakensberg. The grapes were harvested early morning at 23.4 Balling. The grapes were destemmed and pumped to the bag press where it lay on the cooled skins for 7 hours. After this it was transferred into steel tanks where it stayed for 3 days at 6.0 deg C. After this the juice was then tapped off and fermented for 12 days. After the fermentation was complete the wine was drawn and kept chilled for an additional two months in cold steel tanks before bottling.This wine is from the first plantings of Sauvignon Blanc in the Central Drakensberg. The wine is bottle matured for 6 months and ready to drink. The RSA white wines don’t age that well and should not be kept for extended periods. Use within 18 Months. We will make new wine next season.
